BRILL (Scophthalmus rhombus)

The Brill is a species of flatfish in the Turbot family, like other members of the Turbot family they are native to the North Atlantic, primarily in deeper offshore waters.
The Brill is brown with lighter and darker coloured flecks covering its body, excluding the tailfin; the underside of the fish is usually cream coloured. Like other flatfish the brill has the ability to match its colour to the surroundings. Brills are on average 50 cm in length. Part of the dorsal fin of the fish is not connected to the fin membrane, which gives the fish a frilly appearance. They are sometimes confused with the Turbot which is more diamond-shaped.

DOVER SOLE (Solea solea)

The Dover Sole, is a species of fish which has a preference for relatively shallow water with sand or mud covering the bottom. It is found in the eastern Atlantic ocean, from the south of Norway to Senegal, and in almost all of the Mediterranean Sea. In the winter it withdraws to the somewhat warmer waters of the Southern North Sea.
The small eyes are close to each other on the right-hand side of the body. This gives the fish the possibility of lurking half-buried in the sand for passing prey. Just like all other flatfish, the Dover Sole is born as an 'ordinary' fish with one eye on each side of the body. The young metamorphose to flatfish when they are about one cm long. The Dover Sole approaches a maximum length of approximately 70 cm.
Chiefs prize Dover Sole for its mild, buttery sweet flavour and versatility and for its ease of filleting. The fish yields fillets that hold together well in a variety of recipes.
